Avocado and cucumber cream

A delicious avocado cream and cucumber, very fresh and healthy. Cold creams become one of the favorite dishes for the summer heat. Very complete foods that provide us with all kinds of vitamins, nutrients and protein. This time it is a cold avocado and cucumber soup, a first course that is not heavy and very refreshing due to the characteristics of its ingredients. Also, in just a few minutes we will have our plate prepared, no need for large kitchen displays.

Ingredients for the avocado and cucumber cream(4 persons)

  • 3 ripe avocados
  • 3 cucumbers
  • 2 garlic cloves
  • 6 tablespoons of virgin olive oil
  • Juice of 1 lemon and a half
  • Salt and pepper


to get started, We will peel the cucumbers and cut them into small pieces placing them in a container to later crush it together with the rest of the ingredients. Then, we will proceed to peel the avocados, making a longitudinal cut and turning them on their own axis and thus comfortably remove the bone. We will add the pulp of the avocado next to the cucumber previously chopped.

Then, We will also cut the garlic cloves and add the extra virgin olive oil and the lemon juice. Be very careful with the lemon bones, since it could sour our cream. Finally, season with salt and pepper to taste.

By last, we will crush all the ingredients with the mixer until reaching a homogeneous mixture. If we want the result to be smoother we will put a little liquid cream, but it's something we leave to taste, not necessary for optimal results.

Once the cream with the desired texture is reached, we will put it in the fridge until the moment we are going to serve it. To accompany, we can do it with some prawns or smoked salmon.
