Avocado and Egg Toast

Avocado concasse, arugula and poached egg

Ingredients for avocado concasse(4 persons)

  • 4 medium eggs
  • 2 Avocados mature
  • Olive oil
  • 30 gr of lime juice (the juice of half a lime)
  • Sal
  • 20 gr arugula
  • Sesame

Elaboration

Put the eggs in boiling water for 6 minutes. Over time, chill in ice water. When they're cold, peel carefully not to break them. Reserve.

Cut the avocado to the half, remove the bone and peel. Cut into cubes 2 centimeters. Garnish with olive oil, lime juice, pepper and salt.

Heat the egg in hot water for 1 minute. In the bottom of a plate put the avocado, add some arugula leaves and sesame seeds. Finish by placing the warm egg.
