Cheesecake the mango

Today we bring you a sooo sweet recipe… Attentive!! That we start our mango cheesecake:

Ingredients

For the base:

  •  200 grams of Maria or Digestive type cookies
  •  50 grams of butter

For the filling:

  •  400 grams of fresh mango
  •  1 envelope of neutral gelatin powder
  •  50 milliliters of hot water
  •  200 grams of cream cheese
  •  400 milliliters of liquid cream
  •  1 cup of powdered sugar (140 grams)

For coverage:

  •  100 grams of mango puree (what will we have done)
  • 1 teaspoon neutral gelatin powder
  •  3 tablespoons of hot water

Elaboration:

Prepare the cake base without an oven by crushing or crushing the cookies and melting the butter in a saucepan or in the microwave. Then mix these two ingredients well until you get a homogeneous paste.

Take a detachable mold of about one 22 cm in diameter and pour the previous mixture. Try to flatten it as much as possible so that it is evenly in the base and put the mold in the freezer while you continue with the recipe.

Prepare the mango cheesecake filling by making a mango puree. For it, Peel and cut the mango into pieces and put it in an electric mixer, or directly stuff the frozen mango pulp and crush. Reservation 100 grams aside for coverage.

Beat the cream cheese together with the sugar until you get a thick cream.

Hydrate the gelatin in a little water for a few minutes and then dissolve the option you used in the hot water.

On the other hand, whip the liquid cream with electric rods if possible.

Pour the mango puree over the cheese and sugar mixture and beat well with a pastry tongue.. Then add the whipped cream and, carefully, mix everything with enveloping movements.

Remove the freezer pan and pour the oven-free mango cheesecake filling on top. Then put it in the fridge and let it set for a few 4 hours or more.

Prepare the topping by hydrating the gelatin sheet in a little water beforehand. Then drain it and dissolve it in the hot water. Add the reserved mango puree and mix well.

Once the filling is curdled, Pour the mango coating on top and put it back in the fridge until it hardens. Then you can unmold it and serve it in portions.
