Mango Tartar

Salmon Tartar, mango and avocado

Today we offer you a dish that has conquered all restaurants, for its unique and fresh flavor. From now on it's up to you to get down to tartar and surprise your diners.

Ingredients for 4 persons:

  • 400 g smoked salmon
  • 400 g of mango
  • 4 large avocados that are somewhat ripe
  • 1 crushed garlic clove
  • 4 pickled chives
  • The juice of two lemons
  • A tablespoon of lemon zest
  • Two teaspoons of soy sauce
  • 3 tablespoons of extra virgin olive oil

To decorate

  • Chopped chives
  • 1 tablespoon sesame seeds

Elaboration

We cut the salmon into cubes, if it is fine we roll it up and cut it into squares. We also cut mangoes and avocados into squares. It is about the three ingredients having a similar size.

We prepare the dressing with combining olive oil, soy sauce, lemon juice and lemon zest, thinly cut the chives in vinegar and we add them to the dressing.

In three small containers we put the salmon on a ladThe, the avocado for another and the mango. We pour several tablespoons of the dressing on each of the containers, We cover them with plastic wrap and leave them rest in the fridge for half an hour.

After the time we use a round mold or a small flange we add the mango first, then the avocado and finally the salmon. It will be as spectacular as in the photo, we need to add a little more dressing, sprinkle sesame seeds and a little chopped chives.
